They are sealed, and supposedly, lubed for life. when they get worn, its replacement time.

if it runs like crap regardless of tire pressure, try setitng the tires as eaglerider suggests, then adjusting the air pressure in the front forks, and the preload in the back shocks. You can actually run the front forks from zero to 14PSI, but I have mine at 5psi. As for the rear shocks, you might have to pick up the adjustment tool; the old "hammer and screwdriver" doesn't work very well with these shocks.

I run at 32 on both when I can get a stinking air pump to attach to the rear tire!
It is such a pain in the arse to get a gas station air hose to fit in the gap between the wheel spokes and the rim so I can hook it to the valve stem for inflation. There used to be a gas station here local that had the little round knob on it's pump air hose, but they went out of business and all of the others have those long straight ends that just won't fit in that gap!
Anyone know of any converters I can place on the valve stems that angle them out?

Yep, I have one installed on my rear wheel right now that extends the stem out at a 90-degree angle. You should be able to get them at any tire or motorcycle shop.

Are they adapters that screw onto the existing stems? Or completely new stems?

30-32psi will give you the best ride and good tire life; riding solo. For 2-up or a lot of weight on your bike, 40psi is my recommendation. 35-40 will also give you the best tire life, and GAS MILEAGE!
Ideally, you don't ever go by either. Put air in, ride for a couple hundred miles, then check the wear pattern on your tires. Compare these to some shots on the net regarding tire wear, and you can then determine the correct pressure for YOUR bike, YOUR tires, and your riding pattern.
And none of that takes into account if you ride aggressively. Aggressive riding should be done with higher pressures, to counteract the flex of the sidewall in the corners.
For myself at 5'10" and 170, I find that my bikes do very well at standard car tire pressures; 32psi. I usually run 40psi on brand new tires until at least the mould release has been scrubbed from the tire. 40 on new tires also helps with the fact that not all tires are "perfectly" round from the factory. Higher pressures will allow the tire to initially wear to a more rounded shape. The last rear tire I bought for my girl's Rebel (a Pirelli mind you) had 2 spots on that were about 1/8" thicker in the tread. This could be felt riding at 32psi, so bumping it up to 40, then riding for a couple hundred miles, going to 38psi, 100 more miles, 36 and 100 miles, and so on....; basically solved the problem. The first couple hundred miles essentially fixed it, but backing the pressure down slowly over a little time, really dials it in.
