Toughest thing is getting them off the bike. Use the blow drier method to soften up the air box boots (described in another thread on the site here).
When setting the float height levels, do yourself a favor and check the fuel level off the bike with some 1/4 OD tubing and a ruler (i.e., homemade manometer), because it is a major pain to get the bowls on and off again with the carb on the bike.
AND one more common issue - when you pull the pilot screw, the washer and o-ring WILL still be in the carb. Even if you look closely with a flashlight you probably won't see them. So before you start moving around the carb and lose them get a small wire - like a twist tie wire - and make a small hook on the end, and fish them out.

Check valve adjustment....valves on these engines tend to tighten up, leading to running bad or even not at all.

If the carbs had fuel dry up in them, then you are ggoing to have to remove them and COMPLETELY disassemble them. I got lazy on one of mine and left fuel in it for 3 years. Carbs were a mess and won't do that again. Once the jobe was done bike runs sweet!
