Welcome.Your carbs are dirty. Most likely the idle mixture jets.A sure sign when the bike won't run without full choke. You can try some SeaFoam in a tank of fuel to see if it helps. Most likely need to pull the carbs for a good cleaning/rebuild.

Overheating problem most likely clogged/partially clogged cooling system, and or fan not operating properlt. What hoses are missing? We need just a little more information, tobe able to attempt to help you.

If u have the stock petcock, there are two hose nipples on it....larger one is for fuel, the smaller one is for vacum from carb(s). With the two ports on the valve cover capped, you can cap one of the vacum ports on one carb, and run a vacum hose from the other carb vacum port to the small hose connection on the petcock.....the stock petcock will not operate as it is supposed to, if no vacum is connected, which sounds like your problem, as far as the petcock supplying fuel to the carbs. Besides, with the vacum ports on the carbs open you have a very large vacum leak, and the bike will most likely not even run, much less idle.

Eagles right, you need vacuum lines...the CV carb was designed to use a vacuum to raise the main needle using the diaphragm in the top of the carbs.

thanks guys the bike ideled fine with both carbs pluged and had the tank set on reserve so it ran until i read what u said an took the tank off again an then notice the second spot for a vacum hose so i conected both carbs on two hoses connected to a T adaptor then ran that hose to the tank now everything seems proper! i love this bike now im costomizing it with little things like relocating my license plate on the side, painting tins, polishing everything else! and redoing my harness an installing my new lights an signals!

You said the there are two big pipes sealed off on top of the motor? Those sound like the radiator lines into the head to me...that would explain the over heating part.
If you can throw up a picture or two on here; and we can get an idea if everything is there or hooked up right.
