Sorry if this question has been asked already-- didn't see it when I searched. There seems to be a variety of brake pad types to choose from-- is there a particular one recommended for our bike?-- or does it depend more on how one rides?

It would on how one rides. If you are a aggressive rider you may want to use the more expensive pads.I always used organic pads as I feel that what our bikes were designed for & came with.I always found that some of the "harder" pads would put too much wear on the rotor of older vehicles not designed for the newer style ceramic pads.

The standard Emgo pads work just fine for me. Last set I put on another bike, lasted about 20,000 miles.

I installed EBC Sintered Double-H Brake Pads.
Trying to get as much stopping power out of that single brake disc as I can. I also installed a steel brake line.
